Role Purpose Statement

The Food Safety Quality Assurance Coordinator plays a critical role in maintaining the Global Quality System (GQS) for LSG Sky Chefs. This position ensures that the Customer Service Center (CSC) meets all regulatory and customer requirements, including compliance with FDA, USDA, and Seafood HACCP standards, as well as airline specifications.

Main Accountabilities

  • Quality System Management: Maintain and update all records and KPIs related to food safety, sanitation, and compliance with airline specifications and regulatory agencies (County Health, State Health Department, FDA, USDA).
  • Compliance Monitoring: Perform daily checks on Good Manufacturing Practices (GMPs), cooler and freezer temperatures, and HACCP documentation to ensure safe handling of airline meals.
  • Sampling & Testing: Conduct environmental swabs and microbiological sampling; submit samples for analysis. Verify Chef Table and plated meal samples for compliance with airline specifications.
  • Flight Catering Inspections: Inspect workstations and production lines for gold standard verification, sanitizer levels, food temperatures, and portion control accuracy. Conduct checks on dispatch areas, galley setups, bonded/non-bonded carts, and catering equipment.
  • Portion & Specification Control: Ensure portion weights and meal components meet airline menu specifications and customer requirements.
  • Training & Support: Assist the Quality Manager in training staff on food safety, sanitation, and airline-specific quality standards. Provide guidance during high-volume flight catering operations.
  • Data & Reporting: Create charts, trending reports, and visual aids to monitor compliance and support continuous improvement in airline catering processes.
  • Regulatory Compliance: Ensure adherence to USDA Regulated Garbage Standards for international flight waste handling.
  • Other Duties: Support commissary (Jump-off) locations and perform additional tasks as needed to maintain quality and safety standards for airline catering.

Knowledge, Skills and Experience

  • Education: High School Diploma or equivalent required.
  • Technical Skills: Proficiency in Microsoft Office, ability to create and maintain trending charts, SOPs, and operate equipment such as thermometers, metal detectors, ATP testing devices, and portioning machinery.
  • Experience: Previous experience in food industry and quality assurance preferred
  • Physical Requirements: Ability to work in cold environments (<40°F) and lift/push up to 25 lbs.
  • Core Competencies: Strong analytical, mathematical, verbal, and written communication skills; ability to work independently and in fast-paced environments; problem-solving and organizational skills
  • Flexibility: Must be available to work weekends and holidays.
