Role Purpose Statement
The primary responsibility of this role is to maintain and support the Global Quality System (GQS) of LSG Sky Chefs and LSG Lufthansa Group Inflight (LHI). This position ensures the Customer Service Center (CSC) operates in full compliance with customer expectations and regulatory requirements, including those of the Food and Drug Administration (FDA), U.S. Department of Agriculture (USDA), and Seafood HACCP standards.
Main Accountabilities
- Ensure all documentation and key performance indicators (KPIs) relevant to the Quality Department and GQS are accurately maintained and updated. This includes records related to:
- Food Safety
- Sanitation
- Regulatory agency compliance (County, State, FDA)
- Internal stakeholders (LHI)
- Airline customers
- Conduct daily monitoring and enforcement of Good Manufacturing Practices (GMPs).
- Verify temperatures in coolers and freezer rooms to ensure compliance.
- Perform environmental swabs and microbiological sampling, and coordinate with local labs for analysis.
- Collect Chef Table samples to confirm adherence to customer specifications.
- Support the Quality Manager in delivering training and daily initiatives focused on quality, food safety, and sanitation improvements.
- Perform workstation inspections to verify compliance with gold standards, specifications, sanitization, food temperatures, HACCP documentation, and PHF setups.
- Conduct portion control and weight verification to ensure compliance with specifications.
- Carry out inspection checks including:
- Dispatch
- Galley
- Non-bonded and bonded areas
- Equipment sanitation
- Review and verify the accuracy and completeness of HACCP logs and other critical food safety documentation.
- Create and maintain charts, trending reports, SOPs, training materials, and visual aids.
- Ensure adherence to USDA Regulated Garbage Standards, including training and ongoing monitoring.
- Provide support to commissary (jump-off) locations as needed.
- Conduct training for hourly staff on food safety, sanitation, and regulatory compliance.
- Perform additional duties and responsibilities as assigned.
Knowledge, Skills and Experience
- High School Diploma or GED required; further education in food safety, microbiology, or quality management is a plus.
- Bilingual (English/Spanish) strongly preferred.
- Strong knowledge of HACCP principles and food safety systems, with experience applying them in a production or manufacturing environment.
- Proficient in Microsoft Office (Word, Excel, PowerPoint) with ability to develop and maintain trending charts, SOPs, and training materials.
- Skilled in using equipment such as:
- Weight scales
- Thermometers
- Metal detectors
- ATP testing devices
- Mechanical portioning and food processing tools
- Prior experience in the food industry or quality assurance preferred.
- Ability to work independently with minimal supervision; must be a self-starter and proactive problem solver.
- Comfortable working in cold environments (<40°F).
- Able to lift/push up to 25 lbs. regularly.
- Strong analytical, mathematical, organizational, communication, and interpersonal skills.
- Must thrive in a fast-paced environment with large, diverse teams.
- Flexibility to work weekends and holidays is required.
