Role Purpose Statement
The Spec Compliance Clerk plays a critical role in ensuring all airline meal components are assembled and presented according to airline specifications and brand standards. Using the Visual Production Guide (VPG) and customer-approved specifications, the clerk inspects and verifies that all production and packing activities meet detailed requirements for portioning, placement, packaging, and labeling before the meals are dispatched for flight.
This role is essential in maintaining customer satisfaction and ensuring compliance with strict aviation catering standards.
Main Accountabilities

Review daily airline meal specifications, plating diagrams, and packaging instructions using the Visual Production Guide and airline-provided documents.

Conduct on-floor visual inspections of assembled meal trays, casseroles, equipment setups, and other flight components to ensure they match customer specs.

Use visual tools and spec sheets to validate product consistency, portion size, layout, labeling, and packing accuracy.

Document findings and flag any discrepancies to production leads and QA team in real time.

Communicate with production supervisors to address and resolve non-compliance issues immediately.

Maintain updated records of spec compliance checks, deviations, and corrective actions taken.

Assist in updating and organizing Visual Production Guides as customer menus change (e.g., seasonally or route-specific updates).

Support Quality Assurance during internal audits, airline audits, and regulatory inspections.

Partner with menu planning, inventory, and culinary teams to clarify presentation requirements and support first-tray setups for new menu cycles.
Knowledge, Skills and Experience

High school diploma or equivalent required.

1+ year of experience in airline catering, food production, or quality control strongly preferred.

Familiarity with airline meal specs, VPGs, or menu build documents is a plus.

Strong attention to visual detail and ability to identify inconsistencies quickly.

Good verbal and written communication skills.

Ability to work independently and remain organized in a high-paced production environment.

Basic computer literacy (e.g., Microsoft Excel, Outlook).

Willingness to work in chilled production areas and flexible shifts, including weekends or holidays, depending on flight schedules.

Production environment includes cold rooms (34–45°F), standing and walking for extended periods, and wearing required PPE.

Role requires routine observation of fast-paced meal assembly lines and interaction with multi-functional teams.
